Fall for me is all about comfort food. But it’s so hard to make low fat fall recipes, without all the richness that makes comfort food so delicious! That’s why it’s so hard for me to find good recipes, that bring that comfort to our table without the calories that comes with them!
I’ve always felt guilty about cooking pasta, let alone adding cheese to it! You know at our home, we always look for healthy recipes not compromising on the flavor.
I experimented, since hubby and son love pasta, and served this dish last week! A one pot pasta bake, which will give you 4 servings or more with only 450 calories for a large serving portion!
In Just 30 minutes you can make this healthy, low fat comfort food, that will make everybody happy! All in one pot!

Low Fat Cheesy Spinach Pasta Bake
1 Tbsp, Olive Oil
1 Cup Diced Onions
3 Cloves of Garlic Minced
1 Pound 90% lean ground beef
Salt and Pepper to Taste
1 Cup of Tomato Sauce
2 cups of uncooked whole grain penne pasta
5 oz of Baby Spinach
1/2 shredded part-skim mozzarella
Boil Spinach with a pinch salt in the water
Boil water and cook penne when water is boiling for 9 minutes
Sautee onion until soft, add ground beef, garlic, salt, pepper and cook until brown and add tomato sauce.
Drain pasta and spinach
Pre-heat the oven to 375F.
In one pot mix tomato sauce, penne and ground beef drained. Add spinach and sprinkle cheese on top and bake for 15 minutes or until cheese is melted.
