Ingredients
  • 1 1/2 Pound Shrimp deveined and tail off
  • 1 Tbsp Olive or MCT Oil Avocado Oil is Also great!
  • 1 small onion chopped
  • 1 Large Tomato diced
  • 1 Can Coconut milk
  • 1 Tbsp Palm Oil
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1/4 cup Chopped Cilantro
Instructions
  1. Sauté the onion and garlic in olive oil.

  2. Add tomato and shrimp, salt, pepper and coconut milk and lower the heat to simmer until shrimp is cooked or for about 15 minutes.

  3. Add Palm Oil and let it cook for another 5 minutes.

  4. Optional: garnish it with chopped cilantro.
