Ingredients
  • 1/2 can Sugar Free/Low Carb Evaporated Milk
  • 2 small Sweet Potatoes
  • 2/3 cup Swerve Brown If you like your casserole really sweet, add more.
  • 2 large Eggs
  • 1 Tsp Vanila Extract
  • 1 Tsp Cinnamon
  • 1/3 cup Chopped Pecans
  • 1/3 cup melted butter
Instructions
  1. Cook sweet potatoes until soft

  2. Pre-heat oven to 375F

  3. Cut sweet potatoes and mash them with a mixer

  4. Add Swerve Brown, eggs, vanilla and cinnamon

  5. Slowly Add the evaporated milk, checking the consistency, make sure it stays creamy but not clumpy.

  6. Add butter to ramekins or pyrex

  7. Mix softened butter, 1/3 brown swerve and pecans, add it to the top

  8. Bake for 30mins or until golden brown

  9. Let it rest for 2 mins before serving
