You can make variations of this recipe. Remove beans, peppers to make it even more keto friendly. I like it hearty and flavorful, so I plan my carbs to fit this meal with my daily 20g allowed.

Ingredients
  • 1 tbsp MCT Oil
  • 1 pound Lean Ground Beef
  • 1/2 cup Diced Onion
  • 1 tsp Cumin
  • 1 tsp Chili Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Black pepper
  • 1 cup Black or pinto beans
  • 1 cup Diced Peppers
  • 1/2 cup Mozzarella or Chedar Cheese
  • 2 cups Water
  • 1 tsp Salt
  • 1 cup diced tomatoes
Instructions
  1. Pre-heat skillet with MCT oil

  2. Add Onions and cook for 5 minutes

  3. Add Ground Beef and Salt and Pepper to Taste, cook until lightly brown.

  4. Add ground water, beef, beans, spices and peppers to the crockpot and cook for 4 hours on high or 6 on low, making sure there's enough water and beans are cooked at the end.

  5. Add Cheese to Your Bowl and Enjoy!
