Ingredients
  • 1 small onion sliced
  • 6 potatoes cut in small squares do not use this ingredient for the keto/low carb version
  • 3 corn ears, split in half I use one half for one of my pockets
  • 1 tbsp Tsp of Garlic Powder
  • Salt and Pepper to taste
  • 1 tbsp Smoked Paprika
  • 2 tsp Olive Oil
  • 1 Smoky Sausage or Kielbasa sliced
  • 1 pound Large Shrimp
  • 1 dozen Clams
  • 1 Tsp Avocado Oil For sausage only
Instructions
  1. PREHEAT THE OVEN TO 350F OR PRE-HEAT THE GAS GRILL

  2. HEAT VEGETABLE OIL AND LIGHTLY BROWN THE SAUSAGE

  3. COVER CLAMS WITH WATER, OLIVE OIL, SALT, SLICED ONIONS, COOK TO UNTIL TO THE BOILING POINT.

  4. OPEN POCKETS AND MAKE SQUARES, FOLD SIDES AND FILL POCKETS WITH

  5. Start by adding the potato and sausage and Add 3 or 4 shrimp next

  6. Add half of a corn on a cub and seasoning to each pocket

  7. Drizzle olive oil and mix of spices and cover

  8. Bake it at 350F for 15 minutes or cook it on the grill for 15-20 minutes, until shrimp and corn are cooked.

Recipe Notes

Remove Potatoes and add corn just to one pocket if you are on a low carb/Keto diet. I eat one pocked without the corn and one with half of a corn on a cob.
