If you are like me, you are always looking for new comfort food recipes in the fall.
I have, more than ever, been looking for ways to eat fresher with lower calories and keeping the comfort in a fall warm meal!
The recipe I’m sharing with you today, adds the South American flavor of yucca to a fall favorite, Progresso chicken noodle soup!
I went to my local Walmart for the fresh Yucca and amazing Progresso selections! You know it’s soup season, time to stock up!
Just in case you are wondering, you can find yucca by the potato aisle, this is what yucca looks like:

Chicken Noodle Casserole
Ingredients
Mashed Yucca
2 pieces of yucca
2/3 cups of milk
2 Tbsp of butter
Salt and pepper to taste
Preparation:
Step 1
Peel, cut yucca in pieces and cook until soft.
Step 2
Use mixer to mix yucca, add milk, butter, salt and pepper and reserve.
Chicken Noodle Casserole
Ingredients
2 Tbsps of corn starch dissolved in water
1 can of Progresso Rich & Hearty Chicken & Homestyle Noodles soup
Preparation
Preheat the oven to 375°F
Step 1
Pour soup in a casserole pan, add dissolved corn starch and stir until thickened.
Sooooo creamy!
Step 2
Pour it in a baking (pie) plate
Step 3
Add a spoon of mashed yucca on top of the soup, you should be able to add 4-5 spoons on top of it.
Step 4
Bake until mashed potato is golden brown or skip this step and eat it by heating the mashed yucca before pouring it over the mixture.
I hope you enjoy the twist on my recipe, not only is it a great casserole but it has the new yucca flavor added to it, making it healthier than the mashed potatoes version.
