In Brazil, breakfast is basically bread, cheese, crackers, yogurt, fruit, juice, coffee, eggs sometimes, but here, in order to offer a healthy breakfast to my family, I need to spend at least an hour to prepare it, which I don’t have during work days.
Most days I get up and I don’t feel like making breakfast, so my son has been eating sugary cereal for breakfast most days. I’ve decided to try some recipes to offer something different, healthier and nutritious to him, without sacrificing my morning time, since I’m not an early morning person!
So I used basically everything I had that could somehow be mixed with oatmeal and it turned out sooooo good, I had to share with you!
Ingredients:
1 cup steel old fashioned oats
3 1/2 cups water
1 cup peeled and chopped apple
1/2 cup raisins
2 tablespoons butter
1 tablespoon ground cinnamon
2 tablespoons brown sugar
1 teaspoon vanilla extract
Preparation:
Mix all ingredients, making sure the sugar is melted in the water. I put it in the crockpot after midnight, set on low for 8 hours. It was ready by 8 AM.
Moisture, soft and the vanilla aroma was just intoxicating! I can’t wait to make it again!
Oh, I doubled the recipe, since my boys love oatmeal!

I need to make this for my kids even though I’m unsure if they would eat it. It looks delicious. I love oatmeal but I opt for instant because it’s easier to make.

I love making oatmeal in the crockpot! We often use steel cut oats instead of old fashioned. Next time I’ll try adding an apple like you did – sounds yummy!
