Facing a 13 pound turkey explosion in my freezer and the fact that in past years, not last year, the turkey stayed in the freezer and was thrown away!
So I experimented last year and this year, I used my favorite recipes which I will be sharing with you!
Next day, after Thanksgiving! Everybody is full, make a Turkey Melt with a mixed greens salad!
Warm up the pieces of turkey in butter, place mayo on the rolls and place turkey on the roll, cheese and toast it for a little bit not to get the turkey dry! I also place sautéed onions and mushrooms or olives and fresh mozzarella instead of cheddar! For my latin lovers, let’s add some red crushed peppers or jalapeño, No matter what you chose, this is a great choice!
Turkey Meatballs
The tricky is that you are not dealing with ground turkey, I recommend using the food processor or a blender to make this one!
Blend turkey meat (1 pound or less) with a sliced onion, parsley, salt, pepper to taste, 3 tsps of mayo, until you have a texture that you will be able to make the balls with. I add breadcrumbs and 1 egg to the mix and a pinch of garlic powder! Be careful with the salt, because the turkey was seasoned when you cooked! Form the balls and:
1) Pass on flour and egg beaten and fry them. Serve with spaghetti.
2) Use the gravy saved and make a sauce with chicken broth and flour, depending on how much sauce and cook in slow cook until meatballs get some color.
3) Fry them as in option 1 and make a cranberry sauce to serve on the side.
Turkey Pot Pie
Warm up turkey pieces on butter, cook 1 large can of cream of chicken soup and half can of milk, 1/2 cup of shredded cheese, mix it and add, salt and pepper to taste. Use 2 pie crusts, because I was too tired of making pies, I used the frozen pre-made crusts defrosted. Place the bottom part and place the filling and cover with other crust! Voila, Bake until golden brown, serve with salad!
