I came home Monday night and hubby had so thoughtfully made soup for dinner, chicken noodle! I am not crazy about chicken noodle soup and I had soup for lunch on the go. So instead of eating something fast and unhealthy, I looked in my fridge and combined a Brazilian stroganoff recipe to a lower calorie version and shared since it ended up looking so pretty!
Several friends and members of our community asked for the recipe, after I told them it took me 15 minutes to cook, so I promised I would share it!
So here is the second recipe for the year, to be included in our Brazilian Goddess Collection which is going to be published in my upcoming e-book of low fat easy Brazilian recipes!
I hope you enjoy and use it when you come home tired and get tempted to microwave a box or open a can!
Ingredients:
1 small onion, diced
1 package of shrimp, tail off and deveined.
1 TBSP of Grape Seed Oil or Olive Oil
1 cup of rice
1/2 seafood broth cube
2 cups of boiling water
1/2 TSP of table cream (found on Hispanic Aisle at Walmart, Target, Shoprite)
Salt and pepper to taste
1 large Broccoli Florette
In order to prepare the meal in 15 minutes you will need to cook both shrimp and rice at the same time!
Preparation:
Heat 1/2 Tbsp of oil, add rice and cook for 1 minute, add broth and boiling water and let it simmer covered. Heat 1/2 Tbsp of oil, add diced onions, sauté the onions and add shrimp, cook in medium heat until water has subsided, add table cream for a creamy texture (or not if you are REALLY watching your calories). In about 12-15 minutes remove rice still hot and use a measuring cup to mold the rice and pour on plate, add the shrimp around it!
