Ensalada de Pollo con aguacate – Chicken Salad with avocado
The holidays bring the memories of my childhood and all the amazing aromas coming out of my mom’s kitchen – who added her unique flavor to holiday favorites! We would munch all day, savoring the appetizers and wondering what was coming after midnight. Coming back from church, sitting at the table with my brother, sister and my parents and the never-ending latino chatting – we’d all talk at the same time – holiday happiness while my mom would bring the most delicious dishes, salads, fresh bread and side dishes which would feed an army! I’ve brought this tradition to my home, incorporating Latino dishes to traditional American favorites. What a great way to bring a piece of my country to my family’s holiday meal! This is one of my mom’s favorite ensaladas, which I am so happy to share today! Hope you enjoy!
Ingredients:
2 pieces of chicken breast
1 tbsp of chopped parsley
1 small shredded carrot
1/2 green pepper cut in small cubes
1/2 yellow pepper cut in small cubes
1/2 shredded onion
1/2 cup of white raisins
Olive oil and salt to taste
1 small low fat plain yogurt
Sliced lettuce in long slices
1 avocado cut in cubes
10 chopped nacho chips
1/2 chopped tomato
Season the chicken to taste and cook it, let is cool off and slice in thin pieces, mix with the other ingredients, everything but yogurt and place in the fridge until time to assemble the salad.
Sauce:
1 can of table cream
1 plain yogurt
2 tbsp of ricota cheese
1 tsp lemon juice
1 tsp of cumin
1 tsp of paprica
1 tsp of pepper
Mix ingredients and refrigerate for at least 30min.
To assemble the salad, place the yogurt mix the chicken mixture, place the salad, then the avocado, then the sauce, lettuce, tomato chips and nachos mixed on top.
Segredo: sprinkle lemon juice on avocado to avoid it getting brown or cut the avocado right before serving to assemble the salad.
