My love relationship with Kitchen Aid products dates back to my wedding when I was gifted my first mixer by my mother-in-law 15 years ago! Every time I use it, it’s like a little part of her is with me, the mixer is still with us and her recipes and traditions are alive in the recipes she shared with me!
My Mixer is still going strong, so many Christmases and holidays, numerous cookies, cakes, all the recipes shared on my blog, so many memories! My KitchenAid Mixer was that reliable best friend whom you can always count on!!! But my counter space has been a bit crowded lately with all the gadgets I have added to our must have family; so the news of a Kitchen Aid Artisan Mini Mixer, which would be as powerful as my old one, but take up a lot less space, was welcomed by us!!!
I present you the MIGHTY MINI – MINI MIXER. POWERFUL PERFORMANCE
Here are my favorite features:
- With the launch of the new Artisan Mini, there is now a smaller mixer that takes up less counter space
- It’s lighter in weight so you can easily move it around your kitchen
- It has the same iconic design and power as our other tilt-head stand mixer.
- It can make up to 5 dozen cookies in it’s 3.5 quart stainless steel bowl.
- The Artisan Mini Stand Mixer also features 10 mixing speeds and comes with a coated flat beater, dough hook and 6-wire whip.
What’s not to love?
Here is the first recipe I made with it! A Brazilian family recipe which has been in our family for over 100 years!
Tapioca Cake
Ingredients
4 Eggs
2 Cups of sugar
200 Grams of butter
1/2 Package of shredded coconut
4 Cups of Tapioca (make sure it’s the one for cake and puddings)
1 Cup of milk
1Tbsp of Baking Powder
Preparation
Preheat the oven at 375F
Beat the egg whites and reserve
Mix, Egg yolks, sugar, butter tapioca flour, milk and baking powder adding milk slowly, looking at the consistency, which should be smooth with the pieces of coconut and tapioca showing, but not runny. So, adding the milk slowly is a must!
Add the egg whites and mix very gently
Grease the pan with butter and pour the mixture
Bake it at 375°F until golden brown.
Optional is a Brigadeiro icing:
Mix 1 can of condensed milk, butter as directed in my Brigadeiro recipe, or watch the video HERE. (Follow all the steps, just not adding cocoa.)
Pour it over the cake and enjoy!!!

Kitchen Aid is the brand I always turn to for my kitchen tools. Our mixer is the most-used item in my kitchen but I do agree it can be a pain to haul out and use. A smaller version would come in handy for little daily tasks.
