I love how cooking brings the family together! Some of the happiest memories I have are around the kitchen and dinner table, remembering how my great grandma would share instructions with my aunt, my mom and it has been passed down to us, as an act of love.
Today I will be sharing one of my favorite comfort food recipes, so perfect for fall and that baking love that takes over our spirit when the crisp cold weather knocks at our doors!
This recipe is one of my absolute favorites and was one of the recipes my aunt made, when I visited my relatives in Brazil in June, at my request!!!
I present to you:
Shrimp Pie – “EMPADÃO DE CAMARÃO”
Step 1:
Crust:
2 cups of butter softened
2 egg yolks
20 Tbsp of flour
A pinch of salt
1/3 cup of milk
Preparation:
Mix butter, egg yolk, salt, flour and add milk slowly until a soft and uniform consistency.
Preheat the oven at 375F
Use a cheesecake type baking pan, lightly coated and spread the mix on the bottom and sides, stabbing with a fork, to prevent from rising and bake the crust for 10 minutes.
Step 2:
Shrimp
1 Pound of shrimp, shelled and deveined
1 Tbs olive oil
1 Medium onion chopped
2 Cloves of garlic chopped
1 Small tomato diced
salt and pepper to taste
1 cilantro bunch chopped
Preparation:
Sauté onions for 10 minutes or until soft.
Add tomato
Add the shrimp, salt and pepper and cook until shrimp is cooked
Sprinkle chopped cilantro and reserve it.
Step 3:
Filling:
1 cup of milk
4 eggs
1 cup of grated parmesan cheese
1 cup of melted butter
1 TBSP of Flour
Preparation:
Beat the eggs, add cheese, butter, milk and flour; add shrimp mixture and mix it.
Step 4:
Pour drained shrimp over the pie crust
Pour the filling mixture on top of the shrimp covering the pie crust. Bake at 375F for 30 minutes or until crust is lightly browned and you stick a toothpick and it comes clean.
Look at this beauty and it was sooo good! It looked and tasted exactly how I remember my mom, my aunt and grandma, abuelita making it! It truly celebrates my culture and family traditions, bringing so many memories, that I love sharing with my own family!
We serve it on a bed of greens just drizled with EVOO, salt and Pepper. Sometimes we just serve it by itself as well!
You know I’m always about eating healthy, right? Did you know that milk is a no sugar added beverage with 9 essential nutrients including 8 grams of protein??? Milk is also one of the most affordable sources of high-quality protein you can find! You can’t go wrong with including milk in your favorite recipes!
Regular white milk has NO added sugar. The sugar in milk comes from naturally occurring lactose.
The Milk Life Somos Fuertes Hispanic Heritage Month program aims to celebrate how Latinos enjoy and prepare their favorite recipes with their families. I want to invite you to check Chef Adrianne Calvo’s recipe:
Sandwich de chorizo, cebollinos y queso “Pepper Jack”, con panecillo tipo “biscuit”

He would blend the onions and peppers and other vegetables so we couldn’t even taste them but it was still healthy. Luckily, my mom knows the recipe and she makes it for us! Brings make good memories when we eat it!
