Continuing our journey with the whole 30 approach, I’m going to be sharing a new recipe every Monday with you! Some of my cooking experiments to bring you that flavor you’re craving without the guilt!
- 6 Eggs
- 1/2 Cup Almond Milk
- 1/2 Red Bell Pepper Sliced
- 1/2 Yellow Bell Pepper Sliced
- 1 Large Tomato Sliced Into Small Cubes
- 1/2 Cup Mushrooms Chopped
- 3 Large Basil Leaves Chopped
- 1 Small Onion Sliced Into Small Cubes
- 1 Tsp Garlic Powder
- Kosher Salt & Black Pepper To Taste

Beat the eggs, adding garlic salt, pepper, milk and vegetables slowly. Pour mixture into a greased pan. ( I use grape seed cooking spray to reduce the calories of using a regular baking spray) .
Bake at 375F for 30-40 minutes or until it’s golden brown or the fork comes clean in the center and Buen Provecho!!!
Sometimes I add olives as well, as below! Use: can always add different vegetables like broccoli, spinach.
When I stayed in Madrid, they made it for breakfast a couple times with seasonal vegetables, but their recipe used flour! If you are not following a restricted diet, you can add a cup of whole grain or any gluten free flour, still keeping it healthy!!!

That’s interesting because my Italian mother-in-law makes a dish like this and she calls it a “frittata,” too! It looks absolutely delicious and I like that it is a change from eating meat, but you still get your protein.
