My mom used to tell us, when you don’t like veggies, disguise them! I grew up in a household where we sometimes had 3 maids and my mom’s job was just to cook and take care of us! So she would mix spices, search for inspiration and we always that amazing aroma of 3/4 dishes for lunch time (largest meal in Brazil). I had never really liked veggies, never! My family’s tendency for obesity and my goal of living a healthy life, built a bond with veggies, so moms knows best, I decided to find some ways to disguise them specially because my son also hates them!
This is the first post on my favorite recipes and how to dress up veggies and bring a delicious meal to your table!
Veggie Medley
10 small mushrooms
10 cauliflower florets
1 zucchini
3 eggs
2 cups of seasoned breadcrumbs
2 cups of flour
Wash vegetables, dry them and reserve. Mix eggs and place them in a small bowl, also place flour and breadcrumbs in separate small bowls. Slice the zucchini and separate the florets in small bunches and slowly pass them in the flour, eggs, and breadcrumbs and place it in a cookie sheet and bake it at 375f for 15min or until golden brown.
If your family is not watching calories, you can fry them!
I pair the medley with grilled fish, baked chicken or steak. Bom Apetite!
