If you are like me, some people in your family like some things, some other people like other things and there’s always the struggle to please everyone! I wanted to experiment on my own first recipe and make some avocado muffins but my son is not crazy about some fruits, so I decided to make my yummy creation, with avocados, and without, as a variation, sharing both with you! Great recipe for breakfast, brunch or lunch! We had it for lunch today!
6 large eggs
4 tbsp of flour
1 tsp of baking powder
1 cup of low fat shredded cheese ( or regular shredded cheese for a richer recipe)
3 fresh basil leaves chopped
1 tbsp of dry oregano
salt and pepper to taste
1/2 avocado chopped in small pieces
1 small onion chopped and sauteed on 1 tsp of butter with 1 tsp Adobo seasoning
Beat the eggs, then add flour, baking powder, cheese, herbs and salt and pepper, pour into cupcake sheet (sprayed with olive oil spray), place avocado slices delicately on top . Bake in 375 for 20min or until golden brown.
For the variation, skip the avocado part.
Made them for lunch today, on top of baby spinach…..sooo good!
Secreto: To lower the calories, make sure you use low fat cheese and the spray is olive oil, you can always also use less cheese! Basil and scallion came from my yard! Aproveite!
