My mom used to make these for us, I saw one similar on Pinterest and decided to make these at home, the way my mom used to make!
1/2 cup of shredded mozzarella cheese
1 Teaspoon of flour
salt, pepper to your taste
Bacon pieces cooked and cut in small pieces
Beat eggs then add all the ingredients but bacon and beat more, then add bacon at the end. Spray Pam on cupcake sheet and place mixture, 3/4 of each cupcake, it will rise.
Bake at 375 F until lightly brown.
Secreto: I like a lower fat version for me, so I separate egg whites, beat them, add ingredients and add fat free cheese, just a little and less bacon. Cuts calories in half and taste as good as the other version! I serve it with 1 cup of mixed fruits.
