Well, Fall is here and I was looking for an easy way to spice up my lunch time in the fall! You know I work from home, so lunch is a time that I cherish and try to find healthy choices to keep me in check with my weight loss goals!
So I experimented with bringing my favorite salad to a quiche!
This is an easy recipe, which can be done having calories in mind or not! So let’s have fun!!!
Ingredients:
4 eggs
1/3 cup of gluten free flour (1 used 1 Cup but it’s lighter if you use a little less)
1 tsp of baking powder
1/2 cup of low fat shredded mozzarella
1 small tomato cut in small pieces
3 Basil leaves
Salt and pepper to taste
Preparation:
Preheat the oven to 375F.
Use your mixer to mix eggs first, flour, baking powder, cheese and tomatoes and pre cut basil at the end! That’s it!
Place it in a greased pan or baking dish and enjoy it!

This is a crustless quiche, maybe they will like better? Also, if they are picky you might want to use less flour, it makes it lighter!
