You know I have been working on living a healthier life in 2017! I’ve been following the Whole 30 approach and now more towards Paleo.
I made my first paleo pancakes this weekend! I had tried making them flourless, but they seemed to be harder and have lost that fluffy texture that pancakes are supposed to have, so I’ve made these with a combination of almond and coconut flour and lista! The best pancakes ever!!!
Easy Paleo Banana Pancakes
Here is an easy recipe for banana pancakes that is paleo compliant.
- 1 1/2 large ripe bananas
- 3 eggs
- ½ tsp vanilla extract
- ¼ tsp ground cinnamon
- 1/8 tsp baking powder
- 2/3 cup almond flour
- 1/3 cup coconut flour
- maple syrup optional
- fresh fruits optional
Beat the eggs and reserve them
Put flour, baking powder, cinnamon and mix it
Slowly add it to the eggs
Add vanilla after that
Scoop 1/3 cup into warm skillet, lightly coated with coconut oil
- Flip when the the bottom is golden brown and cook both sides evenly
