I’ve made this recipe a couple times and my friends asked for the recipe, which was previously shared on my cooking blog, which I no longer use. So I’ve decided to share the recipe here, because it is so low fat and easy and just perfect for a family night when you don’t have time to cook!
Ingredients:
1 pound ground beef
1 onion sliced
salt
olive oil
Lettuce to decorate
2 TBSP of Low fat sour cream
3 chopped cherry tomatoes
4 large low carb flour tortillas
2/3 cups of water
1 1/2 cup of low fat shredded cheese
Brown the ground beef with olive oil and onion, add taco seasoning mix and water, I buy any brand with mild flavor. Let it simmer, follow recipe on package. Remove and let it sit. Place first tortilla, cover with taco mix and sprinkle cheese. Place new tortilla, taco mix and cheese, until you finish the four tortillas and cover with remaining cheese, bake for 20min. Decorate with chopped lettuce, diced tomatoes, sour cream and serve! Your family will love you! What’s your awesome sauce? Can’t wait to hear it!

Mmm, tacos, my favorite! I’ve also used Greek plain yogurt as a healthier sub for sour cream, but I’m partial to sour cream myself 🙂
