I’m always looking for easy ways to have a healthy lunch to escape the everyday salad trap! Don’t get me wrong! I love salads and smoothies but after a while, it gets boring and I find myself looking for easy, healthy options I can maybe freeze and enjoy a couple times!
This is one of my favorite recipes! I used tomatoes and fresh basil from our garden! Hope you enjoy as much as we did!
Vegetable Gluten Free Frittata
Ingredients:
1 cup of gluten free flour
6 Eggs
1/2 cup of milk (I’ve used Silk Almond Milk)
1/2 cup of low fat cheese ( I’ve used mozzarella)
1/2 Bell Red Pepper
1/2 Yellow Bell Pepper
1 large tomato
3 large basil leaves
1/2 cup of mushrooms (chopped)
Salt and Pepper to taste
Preparation:
Beat the eggs, adding salt, pepper, flour, milk, cheese and vegetables slowly. Pour mixture into a greased pan. ( I use grape seed cooking spray to reduce the calories of using a regular baking spray) . Bake at 375F for 30 minutes or until it’s golden brown.
