Today I tried something new! I was looking for ideas to use our Jalapeños, which looks gorgeous and ready to be included in some great new recipes!
I had an idea: make jalapeño corn muffins, but the recipe I had was not diet friendly, so I changed a few ingredients, making a gluten free version of my husband’s favorite bread!
3 tbsp of butter
1/2 cup of unsweetened apple sauce
1/4 cup of honey
1/4 cup of sugar (granulated)
2 large eggs
1 cup almond milk
1 cup cornmeal or corn flour, which I buy at the Brazilian store, but it has no starch in it.
1 cup gluten free flour
1/2 tsp salt
1/2 tsp baking soda
1 jalapeño (large) cut in thin slices, with seeds removed
Preheat the oven 375F, grease a muffin pan with with non stick spray
Melt butter, add applesauce, sugar, honey, eggs and mix all the ingredients together.
Add salt, baking soda, half of jalapeño, almond milk and stir.
Add cornmeal, gluten free flour and stir, if it’s too thin, add a little bit more flour. Pour it on half of each muffin pan and bake it for 15-25 minutes until golden brown.
Tip: I added the jalapeño decor on top when it was half cooked, otherwise it would sink in! I used honey to drizzle while hot! It was soooo good!

This is a great combination of flavors. Cornbread muffins is one of my favorite breads and I love it with chili. I will have to give this a try.

These sound really good-unfortunately I can’t eat Jalapenos anymore–my stomach would rebel! And even though I am not worried about Gluten free eating I think I might try to make these (without those hot peppers!)
