How My Keto Journey Started
I want to start by sharing how vulnerable this post is, since I live on my image and some of the pictures below have never seen the light of social media! They’ve been secretly stored in my phone. But I feel many of you feel the same shame I felt in 2020 and are looking for answers, the same way I was, so here we go!
What is Keto?
In a nutshell, keep your carbs under 50 grams a day, make sure you’re eating healthy fats and also watch your proteins, because a lot of proteins turn into sugar.
The Ketogenic diet (or Keto diet, for short) is a low carb, high fat diet that offers many health benefits, but that doesn’t mean you’re going to eat cheese and bacon every day.
In fact, many studies show that this type of diet can help you lose weight and improve your health.
How I started
Let’s go back to January 2020, beginning of pandemic – I, who never had back pain in my life, came down, out of the blue, with a severe back pain which ended up being a pinched nerve!
The picture above was taken at a boat show, just a few days after my pinched nerve episode and urgent care visit!
I had been unhappy with my inability to lose weight even though I had tried everything that had worked in the past, such as Weight Watchers, Atkins, Reduced Portions … literally everything. Yet the weight just kept creeping in.
The top of my frustration was hearing from my OBGYN that I was “getting old” and there was “nothing I could do!” Really?
I was also invited to do a shoot for a workout clothing brand and I looked horrible in everything! I wanted to cry!
Picking up the pieces of my health after a few weeks with a chiro and the pandemic full force, I started my journey to a healthier and better me.
Hubby and I started walking/hiking flat easy trails. You can read more about hiking HERE.
I also came across Keto & Intermittent Fasting ! Things I had never tried! It was time to start. After all, I had tried everything and was almost at my weight at the end of my 2013 pregnancy … crazy, right?

So In January 2020, I started with a few basic steps!
How To Start Keto
Clean Your Pantry
I cleaned my pantry and also cleaned a part of my kitchen cabinet to house only Keto baking products. They are also separated in my pantry, for easy access.
Snacks, Gatorade, Sauces, Keto Bread among other things.
Buy A Large Water Bottle
I bought a 64oz water bottle which was my initial water intake daily!
I love drinking water now, but it hasn’t always been like that!
The large water bottle reminds me to keep drinking and stays by my side at night when I’m watching TV!
Purchase A Few Keto Staples

Almond Flour became my friend for baking, blanched, finely sifted, it’s the best!
Avocado Oil, MCT, EVOO & Ghee Butter were my best friends!
I added a lot of veggies, because Keto for me was not about giving myself an excuse to eat cheese and bacon, like most Keto Instagram accounts have advertised.
I believed in a good balance and finding in Keto Lifestyle, an option to live a healthier life while losing weight!
Add Carb Manager App To Your Phone
My most powerful weapon! This free app has helped me understand there are tons of carbs in starchy veggies and some fruits, for example and how to avoid them!
I start my day by logging everything to make sure it fits in my 21 carb day goal! I started at 50 carbs and moved towards this goal!
Do Something To Keep Moving Everyday
I am lucky to have a gym room at my home, which saved me during the pandemic! But you don’t need a gym room start moving!
Grab a good pair of sneakers and go for a walk, track your steps with your phone/apple watch, set goals there to take you to the next level!
Great Keto Recipes
I started experimenting to find recipes which would please my husband and/or be changed by adding a carb side for him, such as pot pie, stir fry, pizza, taco bake, shepherd’s pie and so many other recipes you can find HERE.
In the beginning I avoided Keto Bread & Desserts, but gradually incorporated them!
