Taco Tuesday is a favorite at our home, so I’m always looking for ways to revamp it, without messing up my low carb lifestyle. This is a recipe my whole family loves and that is also Keto Friendly . . . I introduce to you: Low Carb Taco Bake.

I use Mission Low Carb Tortillas in my recipe, because they are Keto friendly and taste just like the carb filled ones!
I buy them in two packs to always have them in my pantry, here is another way to use them, when making Tortilla Chips.
Let’s get started!
This is a super easy and delicious low carb/Keto recipe your family will love!
- 1 pound Lean Ground Beef
- 1 tbsp Olive Oil
- 1 pinch Salt
- 1 pinch Pepper
- 1 1 tsp Cumin
- 2/3 cup Taco Sauce I make it homemade, check the blog for more.
- 1 large Onion
- 1 cup Lettuce Shredded
- 1 small Tomato Diced
- 1 tbsp Sour Cream
- 2 cups Cheese Mozarella or Blend of Mexican Cheeses
- 3 tortillas Low Carb
Heat up a skillet to medium heat and add oil and onions
Cook Beef To Golden Brown and add salt, pepper and Cumin
Add Taco Sauce, reduce heat and let it simmer
Reserve The Beef
Add a little sprinkle of sauce to the bottom of pyrex or baking sheet
Add low carb tortilla
Add Beef with sauce
Cover it with another tortilla, until you reach 3.
Add Sauce and Beef as the last layer and cover it with cheese
Bake for 20mins or until cheese is melted
Add lettuce, tomato and sour cream to decorate it and serve!
I always add a bit more of water to have plenty of juice to simmer in the oven, but the recipe above is for a thicker sauce.
I also like the cheese blend to get that color into the recipe. Just remember to buy good quality cheese which melts nicely when baked.
