Shepherd’s Pie is one of my favorites, but keto lifestyle means no potatoes, so I subbed them for cauliflower mashed potatoes and today I’m sharing the delicious Keto Shepherd’s Pie.
Keto Shepherd’s Pie
Just one tip: make sure your cauliflower rice is cooked and cooled off ahead of time and the excess water is removed from it.
This easy version of a favorite will give you the flavor without the guilt!
- 1 Pound Lean Ground Beef
- 1 Bag Frozen Raw Riced Cauliflower you can also make it at home, I buy the bag to save time.
- 1 Large Egg
- 1/2 Cup Almond Milk
- 1 tsp Xanthan Gum
- 1 tbsp MCT Oil
- 1 tbsp Salt
- 1 tsp Pepper
- 1 cup Mozzarella Cheese
- 1 tsp Avocado Oil
-
Brown Ground Beef on a skillet with MCT oil, sometimes I add onions but due to high carb nature, you don't have to.
-
Cook the Cauliflower Rice for 15 minutes, drain and add almond milk, salt and pepper to taste, xanthan gum and cheese and cook until creamy and cool it off for 30 mins.
-
Add the egg to the mashed Cauliflower, mixing it gently.
-
Pre-heat the oven to 375F
-
Grease a baking pan with Avocado oil
-
Add Lean Ground Beef to the pan
-
Add Mashed Cauliflower
-
Bake for 30 mins or until Golden Brown
-
Enjoy!
