My son and I came up with this recipe, our version of a common mustard salmon recipe! Low fat recipe, full of super foods, this is a recipe I always keep bringing back to our table! This memorial day weekend, we brought it back to help us celebrate the ones who work, so we can have the freedom to cook in our backyards! Hope you enjoy!
Ingredients:
1 Salmon filet
1 pound of small potatoes
1 tsp of capers
Rosemary
Salt, Pepper
1 tsp of mustard, depending on how picante you want, you can use dijon, honey or yellow mustard, always try to use a good quality one.
1 pinch of Adobo
1 tsp of olive oil
Marinate the salmon for at least 2 hours on salt, pepper and mustard and place it in the fridge.
Cut potatoes in 1/4 and mix, olive oil, Adobo, rosemary leaves and salt and pepper and reserve for at least 30min.
Fire up the grill, medium heat and cook the potatoes first, then, when they get some color, place the salmon on the grill, cook for at least 20min.
Serve with a mixed greens salad.
