You know as a Latina, I seek a balance that allows me to enjoy food that’s good, while still indulging. Chatting with my friends, I’ve noticed that the mindset has shifted from “I have to eat healthy foods” to “I enjoy eating healthy foods.” and Avocados From México are one of our perfect guilt-free pleasures.
In the Spring, instead of going full blast on grilling and summer options, I like cooking hot/cold meals which bring a light warm weather flavor but keep our bodies nourished on those colder Spring nights!
That’s why I love adding Avocados From Mexico, which are always fresh, to make my recipes brighter and sooooo delicious with added good fats and nutrients! ¡¡Qué rico!!
Spring for me also means more celebrations and entertaining with family and friends! Getting together to celebrate warmer weather reminds me of growing up in South America, where it’s warm most of year.
Warm weather for me means celebrating life, enjoying time outdoors on my deck and remembering great times spent in my home country!
That’s why I want to share a recipe that always brings fiesta to the table when I’m entertaining!
STEAK TIPS WITH AVOCADO DRESSING
Ingredients:
2 Large Steaks
2 Tablespoons of Avocado Oil
5 garlic cloves
1 Bag of fresh spinach
Salt and Pepper to taste
1 ripe Avocado From Mexico
1 cup of lowfat plain yogurt
1 bunch of chopped cilantro
½ lime juice
Preparation:
Steak
Pre-heat a skillet with 1 Tablespoon of avocado oil
Cut Steak tips and season with salt and pepper
Cook Steak to lightly brown
Hot Spinach Salad
Pre-cook the spinach in water for 10 mins, remove and drain it.
Pre-heat 1 Tablespoon of Avocado oil and minced garlic cloves
Add spinach and cook for 5 minutes, adding salt and pepper to taste
Avocado Dressing
I usually make the avocado dressing ahead of time and leave it in the fridge to add more flavor to it! Make sure your Avocado is ripe, that’s why I love Avocados From Mexico, because they are always right and always in season!
Add 1 chopped avocado, yogurt, chopped cilantro, lime juice and salt and pepper to taste and blend it to a light puree consistency.
Assemble the hot salad and steak tips on top and drizzle the avocado dressing over Steak and Hot Spinach Salad and enjoy!!

What a fun meal for family gatherings or parties during Spring and Summer. I think that avocado dressing is a keeper! I love collecting recipes of dressings since I usually have salads during summer.
That’s a really easy recipe and one that my husband and I will enjoy. He loves steak and it would be nice to prepare this for him!
