By now you know I am on a diet, trying to make the same latin recipes I love with a new twist and lower fat versions of it! So, to all the latinas who made weight loss a new years’ res, here is to you! I made it tonight and it was delish, saboroso!
Ingredients:
3 red or any bell peppers
1 onion sliced
1/2 cup of weight watchers Mexican Blend of low fat cheeses
1 cup of rice
1 pound of low fat ( 94% lean) ground beef
1 cube of beed bouillon
Ground Coriander
Ground Black Pepper
Cumin
Olive oil
Salt to taste
Preparation:
Open the Peppers, clean the inside, making sure there are no seeds left and reserve it.
Cook ground beef on olive oil, onions and season with coriander, black pepper, cumin and salt to taste until brown. At the same time cook 1 cup of rice with one beef bouillon dissolved in water.
Place the rice and ground beef inside the peppers and bake on 375F for 30min or until peppers are tender. Place cheese equally on top of peppers and bake until cheese is melted or approximately for 10min.
The result is a low fat, full of flavor meal! My family loved it!
If you are not on a calorie count race like me, just substitute the meat, the cheese, but I can assure you, the lower fat version is delicious!
