So … we’re a family of bread lovers! But carbs, sugar and a healthy lifestyle don’t go hand in hand.
My son is training for basketball, I’m doing Weight Watchers and working towards a healthy me, so I’ve been experimenting with adding more vegetables, reducing my meat intake and bringing some flavor to our daily favorites!
One of my newest obsessions is vegan cheese! I’ve tried three brands and love them all! Of course if we go overboard, we will pack our meals with calories, so the healthy concept goes out the window! My secret is: use it in moderation!
Now you’re probably thinking: why vegan cheese? Because dairy has proven to leave me bloated and a lot of studies show that daily high does of dairy can cause long term stomach issues as well. So I’ve been experimenting with reducing it.
Let’s get started with this low carb vegetarian recipe for veggies sticks which will leave your family and friends asking for more!
Veggie Sticks
Ingredients
1 Zucchini shredded
2 eggs
2 cloves of garlic chopped
2 Tbsp of Italian Seasoning
1 and a 1/4 cup of vegan cheese
2 Tbsp of corn or tapioca starch
Salt and pepper to taste
Finely chopped parsley
Preparation
Pre heat the oven at 400F
Cut the zucchini ends and shred it
Mix the zucchini, eggs, garlic, seasoning, cheese, starch and salt and pepper to taste
Place parchment paper on a baking sheet and use your hands to spread the mix flattening it
Bake for 25 minutes
Add the remaining cheese and parsley and bake for 5 minutes
Cut and serve with warm tomato sauce as an appetizer or with tomato soup as a great healthy vegetarian meal! The recipe will give you about 20 sticks!
The first time I made it, it was a bit soft, so I drained the zucchini and some of the egg the second time and they turned out crunchier!
Sooo good you won’t believe it! This recipe will be a staple at all your holiday gatherings if you are planning on bringing some healthy appetizers or menu items to the table!
