This recipe has history, the chicken was originally bathed in a curry sauce. My son hates sauces, so I changed the recipe and sneaked in the curry in the rice. The recipe is deliciosa and easy, plus the garlic used abundantly on the chicken fights colds and infections, says Dr. Oz!
1 Pound of chicken strips seasoned with adobo and 3 cloves of chopped garlic for at least 5 hours.
Heat olive oil (for Omega 3s) and cook chicken until lightly brown
1/2 chopped sweet pepper ( green)
1 small tomato finely chopped
1tsp of butter ( optional, I did not use it tonight)
3 cups of water
1 tsp of curry
Bring it to a boil
add rice 1 1/2 cups of rice and reduce heat until rice is soft.
Secreto: if you want to cut prep time in half, use Zatarain Yellow Rice. it tastes very good!
