Today was a busy cooking day in my house! We had clams for appetizers, grilled salmon and zucchini fritters! This recipe was originally seen on Pinterest but I modified a bit to meet my family taste buds!

4 tbsp of flour
450g of zucchini grated (1 large zucchini)
40g of parmesan cheese (shredded)
salt and pepper to taste
2 eggs beaten
Secreto: I added small jalapeño pieces on mine ( my son and hubby don’t like it), I also added some flaxseed flour on mine to add fiber. Mine were fried after these were done. You can also make them while whole wheat flour to lower the calories even more! Enjoy! Low fat, low carb side dish! Super Yummmm! Saboroso!
