My mom gave me this recipe two weeks ago, she originally uses this cake to make a recipe with a filling, but since I’m trying to cut some calories, I saved the richness to the icing only.
Ingredients:
Cake:
4 eggs
7 Tablespoons of Butter
2 cups of confectioners sugar
1 cup of coconut milk
1 cup of baking cocoa
2 cups of flour
1 tablespoon of Baking Powder
Preparation:
Beat egg whites only and reserve. Beat sugar, flour, baking powder, egg yolks then add coconut milk and cocoa. Beat until smooth consistency, add egg whites, beat lightly.
Pre heat oven at 375F and bake until golden brown.
Icing:
1 can of Condensed Milk
2 Tsp of Butter
Preparation:
Cook until smooth or that the color is lightly changed to darker than the condensed milk.
Pour over cool cake and sprinkle crushed candy on top. I used Sonho de Valsa, a Brazilian Candy, found in Brazilian stores only. The result is an amazing texture, melting in your boca!
Segredo: I prefer to use La Lechera Condensed Milk and Goya Coconut Milk, because they have basically the same consistency and taste of the Brazilian ingredients.
