
I make The Cauliflower Au Gratin as a side dish often, I pair it with steaks or chicken, but honestly, you could have it as a main dish as well. It is low carb, keto and so delicious!
Keto Cauliflower Au Gratin

Make sure the cauliflower is large and fresh!
Use Fresh parsley, not dried!

This easy Low Carb, Keto Friendly Recipe will become a favorite!
- 1 1 large head of cauliflower, cut into florets
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp cream cheese
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/2 tbsp onion powder
- 1/2 tbsp smoked paprika
- Salt & Pepper To Taste
- 1/4 tsp tsp ground nutmeg
- 1/2 cup Keto "Bread" Crumbs or crumbled pork rinds
- 1 tbsp chopped fresh parsley for garnish

Preheat Oven: Set your oven to 375°F (190°C). Grease a baking dish.

Cook Cauliflower: Steam or boil cauliflower florets for 5-7 minutes until tender. Drain well.

Make Cheese Sauce: In a saucepan over medium heat, melt butter and sauté garlic until fragrant.Add heavy cream, cream cheese, onion powder, paprika, nutmeg, salt, and pepper. Stir until smooth.Lower heat and mix in cheddar, Parmesan, and mozzarella cheese. Stir until melted.

Assemble & Bake:Mix cauliflower with the cheese sauce, then transfer to the baking dish.Top with crushed pork rinds or Keto Bread Crumbs for a crispy crust. Bake for 20 minutes or until golden and bubbly.

Garnish & Serve: Sprinkle fresh parsley on top and enjoy warm!
I personally don’t like pork rinds, so I make Keto Breadcrumbs by toasting Keto Bread and crumbling it. Super easy to make! You can find Keto Bread at your nearest grocery store!
