I grew up eating this soufflé, but my mom used to make it in Brazil, with potatoes as the base to it! Well, my Keto Cheese Soufflé is lighter, low carb and easy to make.
Keto Cheese Soufflé
This low carb Keto Cheese Soufflé is a great side dish or main dish paired with sautéed spinach or a bed of greens.

You can choose other types of cheese, but make sure the cheese is a good brand, meaning, it is real cheese, so it easily melts and compliments the other ingredients.
I personally like Kraft and Sargento. They are my favorites!
Sometimes I add Pepper Jack to Mozzarella for an extra kick!
Herbs are up to you, you can also add chopped parsley or chives instead of the Italian herbs.
This time I tried it with herbs and chives
Keep in mind egg whites will take a while to reach the “fluffy” consistency, called “clara em neve” in Brazil, because it looks like snow. So I personally start that process early on.
Make sure you Almond Flour is finely sifted and blends well. If you have nut allergies, you can try using King Arthur Keto Wheat Flour, but I prefer Almond Flour for this recipe.
Coconut flour will NOT work, trust me, I’ve tried.
Fold the Egg Whites softly, not letting it lose that fluffiness, because that is what is going to make the soufflé rise!
Keep in mind it’s just 2.3 net carbs per serving and 394 calories, so you can plan your day!

- 4 Large Eggs separate the whites from yolks before start the recipe
- 1 Cup Shredded Gouda and Mozzarella mix
- 1 Tbsp Italian Herbs You can substitute them for any herbs you like.
- Salt to taste
- 2/3 Cup Heavy Cream
- 2 Tbsp Blanched Almond Flour I prefer the blue diamond brand
- 2 Tbsp Butter I prefer salted room temperature

Start beating the egg whites until they are fluffy and no liquid comes from it

Pre-Heat The Oven at 375F

Use a skillet and melt the butter

Add almond flour and cook before it boils, for about 1 min

Add heavy cream and continue to cook for about 4 mins

Add cheese, salt and herbs and continue stirring

Remove from the heat and let it sit for 2 minutes

Mix in the egg yolks

Fold cheese blend into egg whites, very gently, not letting the egg whites lose texture.

Place mixture in an oven safe container previously coated with butter

Bake for 20 minutes or until it is golden brown and the sides have risen
