I haven’t really craved desserts but I have a few go to desserts to keep me on the Keto diet track and also taste delicious like this Keto Low Carb Brownie Recipe.
The hardest thing for me when I crave sweets is to make sure it doesn’t have the after taste or that the dessert is really worth the carbs.
I’ve been experimenting with cakes and other desserts and will be sharing them later but this is a recipe I will be making more often than I wish!

For this easy Keto Recipe you will need a few staple ingredients that you will always be using:
Blanched Almond Flour
Why blanched, because you don’t want your brownie to taste like sand…that’s the texture when you use regular almond flour.
I’ve learned the lesson the hard way, so you don’t have to!
MCT Oil
I use MCT oil on salads, any fried needs and for baking.
It’s not only low carb, but it also is plant based and gives me energy! Love the Orgain brand!
Monkfruit Granulated Sweetener
I like monkfruit sweetener because in my opinion, it doesn’t leave any after taste.
Xanthan Gum
I promise you, if you’re following the keto diet, you will be using those products once a week or more!

Keto Low Carb Brownie Recipe

- 1 cup Blanched Almond Flour I’ve made it with coconut flour and it tasted really good as well. Sometimes I do half and half for less calories,
- 1/4 cup Cocoa Powder
- 2 tbsp Dark Cocoa Powder
- 1 tsp Baking Powder or Xanthan Gum
- 1/2 tsp salt
- 3 tbsp MCT Oil If you don’t like MCT Oil, you can use Coconut Oil.
- 1/3 cup Butter
- 2/3 cup Monkfruit Granulated Sweetener
- 2 large Eggs
- 1 tsp Vanilla Extract
- Optional: Walnuts
Instructions:
- Pre-heat the oven to 350F
- Mix all ingredients
- Line a square pan with parchment paper or add cupcake baking cups to cupcake pan
- Pour the batter to fill 2/3 of the cupcake cup or square pan.
- Bake it for 20 minutes or until toothpick is dry.
- Enjoy
