Sweet Potato is usually not a Keto Friendly vegetable. I want to recommend that you save this recipe for later if you’re just starting, or for a “cheat day” or if you are on maintenance like me and you’re not aiming to lose more weight. What I can guarantee is that this Keto Sweet Potato Casserole tastes amazing!
Keto Sweet Potato Casserole

A few things to consider:
*Do not use canned sweet potatoes/yams which come immersed in added sugar, use a real sweet potato instead
*Add the sugar free evaporated milk, you can also sub for sugar free evaporated coconut milk or just use sugar free almond milk. I’ve used the three options and had the same results. It all depends if you like the coconut taste or not.
*Make sure you have Swerve Brown, not a regular baking sweetener, as it will affect the consistency and taste.
*The cooking time depends on the oven, so I recommend checking the casserole with a toothpick to make sure it comes back clean, because you don’t want to over cook it. Sometimes it’s golden brown but not completely cooked.
Some Tips:
Choose two small potatoes instead of large ones. I usually make a larger batch to separate the real sugar batch for my husband and son:
Cut Sweet Potatoes after cooking them, to avoid the clumps:
Slowly add ingredients, leaving the evaporated milk for the end and add it slowly, making sure it’s creamy, before it becomes runny. You might need less or more of it, depending on what type of sugar free evaporated milk you’re using, so add it slowly.

I do not add the pecan topping to all of them to give me the option to use a lower carb option, depending on the protein I’m adding to it:

Swerve Brown
This easy Low Carb Keto Sweet Potato Casserole will become a go to recipe you use all year long!
- 1/2 can Sugar Free/Low Carb Evaporated Milk
- 2 small Sweet Potatoes
- 2/3 cup Swerve Brown If you like your casserole really sweet, add more.
- 2 large Eggs
- 1 Tsp Vanila Extract
- 1 Tsp Cinnamon
- 1/3 cup Chopped Pecans
- 1/3 cup melted butter

Cook sweet potatoes until soft

Pre-heat oven to 375F

Cut sweet potatoes and mash them with a mixer

Add Swerve Brown, eggs, vanilla and cinnamon

Slowly Add the evaporated milk, checking the consistency, make sure it stays creamy but not clumpy.

Add butter to ramekins or pyrex

Mix softened butter, 1/3 brown swerve and pecans, add it to the top

Bake for 30mins or until golden brown

Let it rest for 2 mins before serving
This recipe individually has 16 net carbs, remember 2 sweet potatoes will yield 6 small ramekins and I will only eat one per meal, freeze the others.
