You know in late August I embarked on a journey to a healthier me! I know you’ve heard this before, but this time it’s for good! I am going to make long lasting decisions to just eat foods which make me healthier and help me reach my weight goals!
I’ve lost 9 pounds in 8 weeks, but I still have a little more to go!
Halloween is just around the corner and so is the candy, sweet treats and so many seasonal dishes to prevent me from staying on track!
Starting today, I will be sharing recipes, workouts I’ve tried, tips and “a-ha” moments, which have made a huge difference to help me lose weight.
Today, I will be sharing one of my favorite breakfast recipes. Actually a Healthy Halloween Breakfast Option: The Egg Cups! You can add meat, you can make it with regular cheese, add spinach and mushrooms, add milk, you can also use it for lunch on top of a bed of greens.
This is my basic recipe!
Healthy Halloween Egg Cups
Ingredients:
4 eggs
1/4 cup of veggie shredded cheese
Fresh oregano and/or basil
Salt and Pepper to taste
Diced peppers
Preparation:
Pre-heat the oven at 375F. Whisk the eggs and add salt and pepper
Place muffin cups on a baking sheet and add 1/2 of the cheese on the bottom of each cup
Add the egg mixture, filling each muffin cup to half of its capacity
Add Peppers
Cover mixture with remaining cheese
Bake at 375F for 35 mins or until golden brown
Who says Halloween is just about candy? There are many ways to keep your healthy goals in check!
Serve warm for a healthy breakfast or on top of a bed of greens for lunch! You can also freeze it. Recipe yields 6 portions, approximately, 5 smart points on Weight Watchers, per cup. You will have a delicious and nutritious, dairy and gluten free breakfast recipe that will leave you wanting for more!
