I grew up enjoying the St. John/Sao Joao Festivities all my life in Brazil, which happens June 24th. The majority of the recipes are NOT Keto friendly, so I decided to cook my own way into enjoying low carb recipes for a Keto Sao Joao.
Keto Sao Joao
Boiled Peanuts
One of my favorite St. John’s foods is enjoying some boiled peanuts.
Super easy, all you have to do is buy raw peanuts and cook them with salt in a pressure cooker or regular pot until soft to bite. Yummm!
1 Cup of Boiled Peanuts only contains 7.8 net carbs.
Keto Almond Cake

I’ve tried using other sweeteners for baking, but Swerve is definitely my favorite. I use the Swerve confectioners Sweetener type for the cake and Swerve Brown for the swirls.
Using a good blanched Almond Flour is also a must, as some types leave the batter grainy. This is my favorite:
I prefer Sugar Free Almond Milk, to avoid the strong coconut taste.
Cinnamon is a staple of a lot of recipes for our St. John/Sao Joao celebrations, so I’ve added a cinnamon/sweetener mix to my classic white Keto cake for the win!
Each slice contains 4 net carbs per slice.
Here are a few step by step pics, so you can follow this super easy Keto Cake Recipe that you can modify and make your own!
Mix Dry Ingredients
Beat The Eggs
Add dry ingredients while mixing them
Add Ingredients for Cinnamon Swirls and mix them
Pour Batter and add the Keto cinnamon swirls as you pour it
Add Almond Slices(optional) and Bake at 375F until golden brown
This easy keto cake will become a favorite at your home!
- 2 cup Blanched Almond Flour
- 1 1/2 cup Coconut Flour
- 1/2 tbsp Baking Powder
- 1/3 cup unsalted butter melted
- 1/2 cup Swerve Confectioners Sweetener
- 1/2 tsp Vanila Extract
- 1/2 cup Sugar Free Almond Milk or Coconut Milk If you don't like the coconut taste, use almond milk
- 1/3 cup Sugar Free Ground Cinnamon
- 1/3 cup Sliced Almonds You can skip the almonds for a more St. John feel, if you wish.
- 1/2 Cup Swerve Brown
- 1/3 Cup Butter You will use the butter for the Swirl mix.

Pre-Heat The Oven to 375F

Mix dry ingredients, all but ground cinnamon and 1/2 cup of Swerve Brown sweetener and reserve, they will be used for the cinnamon swirl.

Beat the eggs, slowly add dry mix, 1/3 cup of butter and milk and add vanilla extract at the end.

Mix the Sweetener, melted butter and cinnamon and create some swirls in the cake as you add the batter.

Bake the cake for 20-30 mins until it's golden brown

Let it cool for 5 mins before slicing it!

Keto “Arroz” Doce – Keto “Rice” Pudding
This super easy sub version doesn’t really use rice, as you know, rice is a not a Keto Friendly Food.
I will publish a full post for this recipe later, as I am still experimenting with it, but here’s some info, if you want to check it out:
Ingredients:
2/3 cup of cashews
50 grams of coconut shavings
2 1/2 cups of water
2 1/2 cups of sugar free coconut milk ( I make it with coconut flour and water)
4 tbsp of granular sweetener
Sugar Free Ground Cinnamon
Instructions:
Blend cashews before it turns into flour.
Cook cashews in water until water has evaporated and they are soft, add other ingredients and cook for 5 minutes and sprinkle cinnamon on the top. That’s it!
While these recipes do not cover all the options we serve during St. John/Sao Joao. They bring a little taste and memories of fun times during the party.
